Mixing the old and the new to create something really special. The blade of this Santuko style chef is Nitro V at RC 62.5. with a 7.5 inch cutting edge and 12.5 inch overall length. Ground full height and hand honed, this knife will serve as a great all around slicer and chopper on the board of any kitchen. The bolsters feature black carbon fiber, while the handle is crafted from local Iowan Bog Oak. This naturally black Burr Oak wood was trapped under the Nodaway River in Adams county, Iowa for over four thousand years before being unearthed and processed for this piece. This tool is a blend of the ancient and modern and will write it’s own little chapter of history in your kitchen.
